There was this great vacation with Jamie, Margareta, Robin in which we had the most amazing meal. Aquavit with the closest thing we could find to fishcakes. Finishing with black cake - fruitcake that had been marinating in rum for months. So yes, there was a lot of alcohol, truth-telling with friends for life.
I have been looking for recipes on line. So I started with Jamie Oliver's fishcakes. Then I tried to emulate a flavor I had when I visited Margaretta in Sweden - it was such a treat. A baked potato served with fish that was kind of salty and smoked and sour cream and a little glass of aquavit.
So here's my concoction:
2.5 lb. organic potato boiled in water with a colander above to cook the salmon.
1 lb salmon steamed in the colander.
1/4 lb smoked salmon (the best you can find)
I then mashed the potatoes with 1 tbs of baking soda, butter and buttermilk - whole milk local buttermilk - OMG so good.
Chop a small handful of parsley.
Smash about 1.5 teaspoon of green peppercorns
mix it all together
then whip in 1 egg.
Make patties and coat with sieved flour.
Then fry in neutral oil until golden brown.
